CHICKEN TIKKA TRAY BAKE
INGREDIENTS Serves 4
- 1kg Select Farms British Oakam chicken thighs
- 500g pepper and onion veg mix
- 400g sweet potato wedges
- 200g tikka paste
- 320g young spinach
- Combine all the ingredients, except the spinach, in a tray.
- Roast at 200°C/ 180°C fan/ gas 6 for 45 minutes.
- Stir once or twice during cooking for an even bake.
- Once the chicken’s cooked, stir in the spinach.
- Allow the spinach to wilt before serving up.
