INGREDIENTS Serves 4

  • 1kg Select Farms British Oakam chicken thighs
  • 500g pepper and onion veg mix
  • 400g sweet potato wedges
  • 200g tikka paste
  • 320g young spinach

DIRECTIONS

  1.  Combine all the ingredients, except the spinach, in a tray.
  2. Roast at 200°C/ 180°C fan/ gas 6 for 45 minutes.
  3. Stir once or twice during cooking for an even bake.
  4. Once the chicken’s cooked, stir in the spinach.
  5. Allow the spinach to wilt before serving up.
