FRENCH-STYLE CORNISH NEW POTATO SALAD
INGREDIENTS Serves 4
- 500g Cornish new potatoes
- 3 tbsp extra virgin olive oil
- 0.5 Grated zest and juice of a lemon
- 1 tbsp Dijon mustard
- 4 spring onions
- 2 tbsp fresh chive
DIRECTIONS
PREPARATION
Halve the Cornish new potatoes. Slice the spring onions. Chop the fresh chive.
AND THE REST…
- Cook the potatoes in boiling salted water for 10-15 minutes, until tender.
- Meanwhile, in a large bowl, whisk together the oil, lemon zest and juice, mustard, salt and pepper.
- Drain the potatoes and tip them into the bowl. Mix well and leave until just warm.
- Stir in the spring onions and chives, and serve.
