INGREDIENTS Serves 4

  • 500g Cornish new potatoes
  • 3 tbsp extra virgin olive oil
  • 0.5 Grated zest and juice of a lemon
  • 1 tbsp Dijon mustard
  • 4 spring onions
  • 2 tbsp fresh chive

DIRECTIONS

PREPARATION

Halve the Cornish new potatoes. Slice the spring onions. Chop the fresh chive.

AND THE REST…

  1. Cook the potatoes in boiling salted water for 10-15 minutes, until tender.
  2. Meanwhile, in a large bowl, whisk together the oil, lemon zest and juice, mustard, salt and pepper.
  3. Drain the potatoes and tip them into the bowl. Mix well and leave until just warm.
  4. Stir in the spring onions and chives, and serve.
