APPLE COOKIES
These are really quick when you’re low on time – you only need a few store cupboard items to get you going.
INGREDIENTS Serves 4
- 2 Pink Lady apples
- 3 tablespoons cashew or peanut butter
- 150 g granola
- lemon halves
- 50 g milk chocolate

PREPARATION
These are really quick when you’re low on time – you only need a few store cupboard items to get you going. Simple slices of your favourite apple, spread with cashew or peanut butter and sprinkled with granola and chocolate chips: a healthier alternative to a real cookie and completely satisfying!
METHOD
- Using a sharp knife slice the apples into 2mm rounds, lay over a board or a large plate and squeeze lemon juice over them. Top with a little spread of cashew or peanut butter. Sprinkle granola on top.
- Using a veg peeler shave a little chocolate over the cookies.
