SESAME NOODLES WITH ROCKET
INGREDIENTS Serves 4
- 2 garlic cloves
- 250g medium egg noodle
- 1 tbsp sunflower oil
- 400g rocket
- 280g raw peeled Honduras prawns
- 6 spring onions
- 3 tbsp soy sauce
- 2 tbsp sesame seed
DIRECTIONS
PREPARATION
Shred the rocket. Slice the spring onions.
METHOD
- Heat the oven to 190°C/375°F/gas 5 (170°C for fan ovens).
- Roast the garlic for 15 minutes until tender.
- Squeeze the flesh from the skins and chop finely; set aside.
- Cook the noodles according to the packet instructions, then drain.
- Heat the oil in a large pan. Stir fry the rocket for 2-3 minutes.
- Add the garlic and prawns, then stir fry for 3 minutes until the prawns are cooked through and pink.
- Stir in the ketjap manis and spring onions and cook for 1 minute.
- Stir in the noodles, sprinkle with sesame seeds and serve straight away.
